This time, we will focus on local flavors and explore how regional plants and mushrooms shape our palate. The discussion will delve into the fascinating world of umami – the fifth taste, which plays a key role in culinary experiences around the world.

Dr. hab. inż. Jacek Łyczko, Associate Professor, UPWr – an expert in food chemistry and sensory analysis.
Keynote Speaker:
Artur Gryszkin – food technologist, lecturer at the Wrocław University of Environmental and Life Sciences, mycologist, and mushroom enthusiast. In his talk, "Mushroom Symphony of Flavors: The Role of Umami in Creating Culinary Experiences," he will explore the world of mushrooms and their significance in cuisine and healthy eating.
