Science Café #2 is behind us!

On 20 February 2025, the second edition of Science Café took place at Barbara in Wrocław. This time, the evening focused on local flavors and the fascinating world of umami – the fifth taste – with mushrooms taking center stage.

The event was moderated by Dr. Jacek Łyczko, Associate Professor at UPWr, an expert in food chemistry and sensory analysis. The keynote talk was delivered by Dr. Artur Gryszkin, food technologist, lecturer at the Wrocław University of Environmental and Life Sciences, mycologist, and mushroom enthusiast. In his presentation “Mushroom Symphony of Flavors: The Role of Umami in Creating Culinary Experiences,” he guided participants through the role of mushrooms in cuisine and healthy eating.

The evening concluded with an engaging discussion and Q&A session, proving once again that sensory science can spark curiosity and inspire conversation.
