On July 3, 2024, Basque Culinary Center Innovation hosted an online workshop titled “Digital tools and sensory research”. The session was led by Erich Eichstetter, a seasoned expert with nearly 20 years of experience in the food industry. His career journey spans from being a chef in Europe and Latin America to working at the intersection of design, innovation, and digital technologies. Today, he serves as Tech Scout & New Digital Product Developer at LABe Digital Gastronomy Lab, where he combines his culinary expertise with cutting-edge digital innovation.
During the workshop, participants explored a wide range of tools and resources essential for researching digital innovation in food, gastronomy, and sensory experiences. The session offered insights into innovative methods and technologies designed to enhance food-related experiences and transform the food industry.
The workshop attracted young researchers eager to engage with emerging trends in sensory science and demonstrated the potential of digitalization in shaping the future of food and gastronomy.
